Thanks for the wonderful holiday everyone! I had a great time :) Really love the South island, it's such a nice place! Even if the wind in Bluff was enough to blow me inside out...
Being back in Wellington is going well for me. It's almost as if I never left in the first place! I handed in two assignments on Monday and I have the third finished and ready to hand in today before my POLS tutorial. Although I have a Japanese test tomorrow, I feel that a huge weight has been lifted off my chest. No more big assignments to worry about for a little while. I have a POLS one due on the 21st of May and a SPOL one two days before that on the 19th of May. Other than that I have a few Japanese things to do in between due to a lack of exam but they aren't so bad. For example, we're doing a 5 minute speech on the 7th of May. We get the option of doing it alone or with a partner and I think Ryan and I will do ours together. That does mean it will have to be twice as long, but it will be good to have double the ideas and double the checking.
Last night I made fried rice for dinner. The recipe I was inspired by used salmon but I didn't have any of that so I made it vegetable and egg fried rice, topped with Japanese mayonnaise. My time in Japan has taught me a few things, one of them being that mayonnaise goes with EVERYTHING. I'm not even joking either. Anyway, the recipe I used also gives you something to do with the leftovers-make fried rice patties. I quite like that idea but the vegetables I used might be too big to do so. I might give it a shot for my lunch today.
Love Erin
